I'm Matteo D'Elia, born in Genova, raised in Rome and currently residing in Wilmslow, Cheshire. Food is my passion and hopefully you can see that reflected in the dishes I create. I have an extensive history in luxury restaurants and hotels. Having started my career at 14, I graduated from the prestigious Gualtiero Marchesi school with a Masters in Italian Cuisine, here I deepened my understanding of culinary artistry and fell in love with my craft. My earlier career took me around the world, gaining experience in some of the most illustrious establishments, under industry leading chefs such as Sydney Schutte, Chris Galvin and Claude Bosi. I furthered my development, palate and understanding of cooking techniques and flavour profiles alongside these renowned Michelin star chefs.
I was part of the team that opened the Waldorf Astoria, Spectrum. Which went on to earn 2 Michelin stars within 6 months. Building on my experience within Michelin kitchens, I worked at Galvin at the Windows. My passion for cooking and desire to understand exactly what my customers would enjoy, coupled with a need to create the perfect dish, every time, has seen me go on to lead teams as the Head Chef in many luxury restaurants including: The Hari Hotel, Broadwick Soho Hotel, Il Gattopardo & Louis.
